As I know Gartner's definition of OT security is “practices and technologies used to (a) protect people, assets and information, (b) monitor and/or control physical devices, processes and events, and (c) initiate state changes to enterprise OT systems. And OT) systems used to monitor events, processes and devices and make adjustments in enterprise and industrial operations.
